Chipotle Garlic Herbed Cedar Salmon

One of my favorite ways of cooking a salmon is on a cedar plank. The salmon will stay intact and there won't be any chances of it being burnt. You can bake it in the oven or grill it on the grill. Enjoy the super juicy salmon with an infused chipotle garlic herbed touch on a cedar plank!

Equipment

  • 2 Cedar Planks
  • Grill or Oven
  • Thermometer

Ingredients
  

  • 1 whole coho salmon or 1 fillet of salmon (bigger than a coho)
  • 3/4 tsp garlic powder
  • 3/4 tsp smoked paprika
  • 3/4 tsp basil
  • 3/4 tsp parsley
  • 1/4 tsp chipotle chilli powder
  • 4 garlic cloves
  • 4 tbsp unsalted butter or olive oil (read notes)
  • 1 bay leaf
  • salt/pepper

Instructions
 

  • Soak your cedar planks in water for 2-24 hours. Dry with paper towel once ready.
  • Salt and Pepper the salmon and let it stand for a couple minutes.
  • In a bowl, mix you dry seasoning and sprinkle onto your salmon. Let marinate for at least 30 minutes to 2 hours in the fridge.
  • When marinated, place your salmon onto the cedar plank.
  • Preheat your grill from about 425F to 450F.
  • In a saucepan melt your butter. Once the butter has melted, add your garlic and bay leaf into your melted butter to infuse it. Pour onto your salmon.
  • Place your salmon onto the grill and cook until temperature of the fish reaches 145F.
  • Enjoy!!

Notes

How to soak cedar planks?
Place your cedar plank in water and place a heavy object to hold it down. Let it soak for 2 hours or more. The more it soaks the better it is because it will burn less on the grill. 
Why does the salmon need to stand when you put salt and pepper on it?
Letting the salmon rest, helps to infuse the flavors by soaking into the fish. 
Why do you marinate the fish for only 30 minutes to 2 hours?
When marinating any fish, you should only marinate it for 30 minutes to 2 hours and no longer because it will cause the fish to be mushy and fall apart. 
Should I crush my garlic or mince it?
Crushing garlic will produce a greater garlic flavor since the juices will be crushed out. Mincing the garlic will give you a light flavor since all the juices will still be intact and in the garlic.
Can I bake the salmon in the oven?
Yes, you can definitely bake the salmon in the oven. Also when baking, the cedar plank is  also allowed in the oven.
Can I use olive oil instead of butter?
Yes you can. Place your olive oil, garlic and bay leaf into a saucepan. Heat until the oil is warm to the touch. Take off heat and let the garlic infuse into the oil. Rest for good 10 minutes.
