Ingredients for chicken pesto tomato skewers:

Chicken: Chicken breast or you can also use skinless boneless chicken thighs.

Tomatoes: Cherry round tomatoes.

Onions: White onion.

Pesto: Basil pesto.

How to make chicken pesto tomato skewers:

Prepping bamboo skewers: Soak your bamboo sticks in water for at least 3 hours or overnight.

Cutting the chicken: Cut your chicken into cubes.

Seasoning the chicken: Season your chicken with salt and white pepper on both sides.

Cutting the onions: Cut your onion in half and then in fourths.

Adding all of the ingredients/Mixing: To your chicken add your tomatoes, onions and pesto and mix everything together.

Forming skewer sticks: Form your skewer by adding chicken, onion, tomato, chicken, onion, tomato and chicken.

Preheat your grill: Heat your grill to about 400-425F.

Grilling: Oil your grill before placing your skewers.(Use a paper towel and pour oil over it. Brush the grill with the oiled paper towel.) Place your skewers on the grill and once you notice that half of the chicken has a whiter color and the other half is more raw with a pinkish color, flip it. Cook until your chicken reaches 165F.

  • 2 chicken breasts
  • 18 round cherry tomatoes
  • 1 medium onion
  • 1/2 cup of basil pesto
  • Salt and white pepper
  • 10 wooden bamboo skewers

Instructions
 

  • Soak your bamboo sticks in water for at least 3 hours or overnight. Cut your chicken into cubes. Season your chicken with salt and white pepper on both sides. Cut your onion in half and then in fourths.
  • Add all of your ingredients into a bowl and mix. Cover with plastic wrap and marinate in the fridge for at least 1 hour to overnight.
  • Preheat your grill to about 400-425F. Form your skewer by adding chicken, onion, tomato, chicken, onion, tomato and chicken.
