Ingredients for homemade potato chips:

Potatoes: Idaho or russet potatoes.

Oil: Avocado oil, canola oil, vegetable oil or any oil that haves a high smoking point.

Seasoning : Kosher salt or any favorite seasoning such as bbq, cajun, etc.

How to make homemade potato chips:

Washing and peeling potatoes: Wash and peel your potatoes. If you choose to keep your skin on your potatoes, then you won’t have to peel them.

Slicing potatoes: Slice your potatoes thinly with a knife or use a mandolin and slice at 1/16″ or 1.5mm.

Keeping potatoes in cold water: Add your potatoes into a bowl and cover them with cold water and ice cubes. Keep your chips in the ice cold water until ready to fry.

Drying Potatoes: Pour out the water and place your chips onto a sheet pan with paper towels on it. Dry your potatoes really well.

Heating up oil:  Into a heavy bottom pot pour in your oil about 1/2 way. Heat your oil up to 375F.

Frying chips:  Add your chips one by one into the fryer. Fry your chips until golden and crisp.

Seasoning chips: Once your chips are fried, allow the excess oil to drain and season with salt or a seasoning of your choice.

  • Wash and peel your potatoes. Slice your potatoes thinly or use a mandolin and slice at 1/16" or 1.5mm.
  • Place your sliced potatoes into a bowl and cover them with cold water and ice. Keep your chips in the ice cold water until ready to fry. 
  • Pour out the water and place your chips onto a sheet pan with paper towels on it. Dry your potatoes really well.
  • Into a heavy bottom pot or a fryer, pour the oil in about 1/2 way. Heat your oil up to 375F. Add your chips one by one into the fryer. Fry your chips until golden and crisp. After every batch check your temperature before adding in a new batch of potato chips.
  • Once your chips are fried, allow to drain the excess oil and season with salt or a seasoning of your choice.
