Künefe

Künefe or knaef is a traditional middle eastern dessert. It’s made up of kataifi which is shredded fillo dough, filled with a sweet cheese, soaked with a simple rose syrup (which is known as attar) and topped with chopped or blended pistachios!

What is the difference between künefe and knaef?

  • Both are made up of the same ingredients except künefe comes from the Turkish cuisine and knaef comes from Palestinian Arabs.
  • In a knaef, the kataifi is shredded in a food processor to a fine consistency while a künefe is chopped into about an 3/4 -1 inch slices.

Ingredients:

 Kataifi: Athens Shredded Fillo Dough Kataifi.

Cheese: Sweet cheese.

Syrup: Rose water simple syrup called attar.

Butter: Clarified softened butter.

Pistachios: Chopped or blended pistachios with their skin off.

How to make künefe:

Making the simple syrup: Into a heavy bottom saucepan add your sugar, water, lemon juice and rose water. Place your sauce pan on a low to medium heat and stir until the sugar is dissolved. Once dissolved pour into a glass jar to cool off.

Cutting the kataifi: Shred your kataifi in about 3/4-1 inch slices as shown in the video.

Cutting the cheese: Cut your cheese into about 1/8 inch slices or you can also crumble it if you prefer less cheese.

Forming the künefe:  Spread your künefe plate with clarified butter using a pastry brush. Add your shredded kataifi and spread it out evenly. Place your cheese into the middle; about a 1/2 inch from the border. Top with more kataifi, press it down and tuck in the sides.

Cooking the künefe: Place your kunefe onto a low to medium heat on a gas stove top. Constantly twist/move ******your kunefe using a kitchen towel so it cooks evenly.

Flipping the künefe: Once you start noticing that the other side of the kunefe is golden, use your other pan (spread with butter) and flip it as shown in the video. Cook the other side to a golden color too.

Adding syrup: Add in about 3 tbsp of the syrup or more if you like it sweeter and allow it to sizzle and soak through.

Topping with pistachios: Top your künefe with chopped or blended pistachios. Serve hot!

How to get the skin off your pistachios?

Blanch your pistachios in hot boiling water for about 30 seconds to a minute and shock them in ice cold water. Dry them on a paper towel and remove the skin.

Where can you buy the sweet cheese and kataifi?

You can find these products in an Arabic, Turkish, Lebanon or middle eastern stores.

Equipment

  • Frigya Kunefe Plate
  • Gas stove top

Ingredients
  

  • 1 1/2 tbsp of softened clarified butter per each künefe plate
  • 3 slices of sweet cheese per each künefe
  • 1 cup of over filled Shredded kataifi
  • 3 tbsp of syrup per each künefe or as much as you like

Simple rose syrup (Attar)

  • 1 1/2 cups of granulated sugar
  • 1 cup of water
  • 1/2 tsp of rose water
  • 1/2 tsp of lemon juice

Instructions
 

  • In a heavy bottom saucepan on a low to medium heat, add your sugar, water, lemon juice and rose water. Stir until sugar is fully dissolved. Pour your syrup into a glass jar to cool off.
  • In a künefe pan, spread your butter with a pastry brush and add in about 1/2 cup of kataifi; spread it evenly.
  • Cut your cheese into about 1/8 inch slices, place them into the middle and cover it up with the other 1/2 cup of shredded kataifi. Make sure to tuck in all of the edges of the künefe.
  • Place your künefe onto a low to medium heat on a gas stove top and constantly move/twist your künefe using a kitchen towel.
  • Once you start noticing that the other side of the kunefe is golden then use your other pan (filled with butter) to flip it.
  • Cook the other side until golden and pour in your syrup. Allow the syrup to sizzle and soak through. Top with pistachios.
  • Serve hot and Enjoy!
