Ingredients:

Chips: White Corn tortillas.

Cheese: Any nacho cheese, I used the Taco Bell Mild Salsa Con Queso (which you can find at a Walmart).

Cooked beef: Taco ground beef.

Pico de Gallo: Fresh pico de gallo.

Cheese: Queso Fresco Cheese or cotija cheese.

Jalapeños: Sliced pickled jalapeños peppers.

Guacamole: Fresh guacamole.

Sour Cream: Any sour cream will work.

Fresh Greens: Scallions freshly chopped and fresh cilantro.

Directions:

Prepping Ingredients: You can prep all the ingredients ahead of time except for the chips.

Frying chips: Fry your chips right before making your loaded nachos, to reserve freshness.

Forming the loaded nachos: Spread out your chips into a pan, top with the heated cheese sauce, warm taco ground beef, pico de gallo, queso fresco cheese, sliced pickled jalapeño peppers, guacamole, sour cream, chopped scallions and cilantro.

How to make Corn Tortilla chips:

Ingredients: White corn tortillas, avocado oil, salt and smoked paprika.

Directions:

1. Cut your tortilla chips into 4ths.

2. Heat your oil to 350F.

3. Once your oil is heated add in your tortilla chips (I added 5-7 chips per batch). Don’t overcrowd your chips and constantly flip them so that they have an even browning. Take them out when they are light brown and make sure you don’t keep them any longer because they will start turning into a dark color and have a burnt taste. Whenever adding in a new batch, check so that the temperature is still at 350F.

4. When your tortilla chips are the right color, take them out onto a plate with a paper towel on it. Then place them into a bowl and add salt, smoked paprika or any other seasonings that you prefer.

5. Enjoy!!
