When do I know when my Panna cotta mixture is ready?

When you start seeing small bubbles (lightly bubbling) on the sides.

Can I use a vanilla bean instead of vanilla extract?

Yes you can.

What kind of gelatin do I use?

I used gelatin sheets. The brand is called PerfectaGel (Gold)

How to bloom gelatin?

Bloom gelatin in cold or room temperature water for 5 minutes.Do not use hot or warm water or else it will dissolve.

Why my gelatin didn’t dissolve?

If your gelatin leaves didn’t dissolve, it means that your mixture wasn’t hot enough.

What is an ice water bath?

Equal parts cold water and ice.

Can I use a smaller cup to make smaller portions?

Yes you can.

How long does the panna cotta take to set?

For at least 4-12 hours.

Why I use frozen raspberries?

Frozen raspberries are better to use, because you will have natural juices and a dark rich color, rather than using fresh raspberries and having a light color and a watery raspberry flavor.

Panna Cotta

Made with only 4 ingredients, this mouthwatering Italian dessert looks incredible yet easy to make. Finish this dessert with a topping of your choice!

Equipment

  • Heavy bottom sauce pan
  • Ice- Water Bath

Ingredients

  • 2 cups of heavy cream
  • 4 gelatin leaves 1 sheet is 2.0g
  • 1/2 cup of sugar
  • 1 tbsp of vanilla extract

Raspberry filling:

  • 200 grams of frozen raspberries
  • 1 small lemon or half of a big lemon (juice of lemon)
  • 2 gelatin leaves
  • 3 1/2 tbsp of sugar

Instructions

Panna Cotta:

  • In a heavy bottom saucepan add in your heavy cream, sugar and vanilla. Place your saucepan on a low to medium heat. Constantly mix your mixture. When you start seeing small bubbles (lightly bubbling) on the sides, take it off the heat and add your gelatin. Mix until dissolved. If your cream is not hot enough, you gelatin won't dissolve.
  • While your cream is cooking, submerge you're gelatin in cold water for 5 minutes. When taking your gelatin out of the water make sure you squeeze out any excess of water.
  • Transfer your cream into a bowl or measuring cup and then place into a ice water bath. Mix constantly until mixture cools down.
  • Cool your cream and then pour it into cups evenly. If you're allowing your panna cotta to set overnight then I would recommend covering it with plastic.
  • Place your panna cotta into the fridge for at least 4-12 hours to chill.

Raspberry Filling:

  • Bloom your gelatin leaves in cold water for 5 minutes.
  • In a heavy bottom saucepan add your frozen raspberries, lemon juice, and sugar.
  • Place your sauce pan on a medium heat and stir to dissolve your sugar. Once your sugar and raspberries are melted, make sure the filling is hot and take your raspberry filling off the heat. Add in your bloomed gelatin and stir until combined.
  • Transfer your raspberry filling into a bowl or measuring cup and place into a ice water bath. Constantly mix until it’s cooled.
  • Divide your raspberry filling evenly on each panna cotta and allow to set for at least 2-4 hours.
  • To garnish, add some fresh raspberries and white chocolate on top. Enjoy!!!!
