Quinoa salmon bowl is a great addition to your meal prep recipes. There really isn’t any proportions in this recipe so you can definitely add and mix up your favorite vegetables or protein of choice!

Ingredients:

Quinoa: Cooked Quinoa.

Salmon: Cube slices.

Onions: Red onions diced.

Tomatoes: Cherry tomatoes.

Avocado: Thinly sliced avocado.

Greens: Fresh Arugula or spinach.

Sauce: Tzatziki

How to make Quinoa Salmon Bowl:

Cook Quinoa: Rinse quinoa well before cooking. Into a heavy bottom pot or saucepan, add in the quinoa. Add in the water and bring to a boil. Reduce the heat to low and close with a lid. Allow it to simmer for about 15 minutes. Then turn it off heat and allow it to steam for 5 minutes; covered. Add the butter and salt to your quinoa and mix while fluffing the quinoa with a fork or spoon.

Prep vegetables: Chop your tomatoes, onions and avocado slices.

Prep and cook salmon: Slice your salmon into cube slices and season with salt and black pepper. On a medium heat, add in the butter and allow it to melt. Add your salmon and cook; flipping it about halfway. Make sure the internal temp of the salmon reaches 145F, before taking it off heat.

Put bowl together: Arrange your bowl by adding quinoa, tomatoes, arugula, onions, avocado slices, salmon and tzatziki sauce.

  • 1/2 cup of quinoa
  • 1 cup of water
  • Salt to taste
  • 1 tbsp of unsalted butter

Instructions
