Green Cabbage Salad
Fresh, healthy and light! Let me introduce you to a green cabbage salad! Super refreshing and filled with lots of nutrients!
- 1 medium green cabbage
- 1 whole cucumber
- .5 oz or a whole bunch of fresh dill
- 1/4 cup of sunflower oil
- 1/8 tsp of black pepper
- salt to taste
Cut your cabbage in half and then in fourths. Remove the core as shown in the video. Shred your cabbage with a knife or a mandolin.
Add about 1 1/2 tsp of kosher salt and 1/8 tsp of black pepper to your cabbage. Mix and lightly press down the cabbage a couple times as shown in the video. This will help the cabbage to become wilted faster. Allow the cabbage to sit for a couple of minutes or until it becomes wilted.
Chop your cucumber and finely chop your fresh dill. Add your dill, cucumbers, oil to the cabbage and mix with your hands or fork. Add additional salt, if needed.
Serve fresh or store in the fridge for up to 2 days.
