Bell pepper canapés

Crispy, crunchy and cheesy! Mmmm.. Now that’s what I’m talking about! The perfect appetizer to make for your next party.


  • 2 green bell peppers
  • 1 yellow bell pepper
  • 1 orange bell pepper
  • 1 red bell pepper
  • 2 medium carrots
  • 1 tsp of garlic powder + more
  • 8 oz of shredded mozzarella cheese
  • 1 French bread
  • 1-2 tbsp of olive oil
  • salt and pepper to taste
  • mayonnaise, as needed


  • Deseed and julienne your peppers. Peel and shred your carrots.
  • In a large pan on a low to medium heat add your oil. Add in your peppers and and allow to cook until halfway cooked while mixing constantly. You can use a lid to help cook the peppers faster. ****If needed add more oil.
  • Add in your carrots and cook until peppers are wilted. Season with salt, black pepper and 1 tsp of garlic powder and mix. Transfer your mixture into a strainer, removing the extra oil.
  • Preheat oven to 350F and get your sheet pan ready.
  • Cut your French bread and spread each slice with mayonnaise. Top with your pepper mixture, then your cheese and sprinkle with garlic powder. Repeat step to each slice of bread.
  • Bake for 10-15 minutes or until cheese is melted and the bread is toasted.
