- Russet or Idaho potatoes
- Kosher salt
Wash and peel your potatoes. Slice your potatoes thinly or use a mandolin and slice at 1/16" or 1.5mm.
Place your sliced potatoes into a bowl and cover them with cold water and ice. Keep your chips in the ice cold water until ready to fry.
Pour out the water and place your chips onto a sheet pan with paper towels on it. Dry your potatoes really well.
Into a heavy bottom pot or a fryer, pour the oil in about 1/2 way. Heat your oil up to 375F. Add your chips one by one into the fryer. Fry your chips until golden and crisp. After every batch check your temperature before adding in a new batch of potato chips.
Once your chips are fried, allow to drain the excess oil and season with salt or a seasoning of your choice.
